My first beer: Bock Beer Extract kit

About 3 years ago, I purchased a Muntons Connoisseurs Range Bock Beer kit but because I didn’t want to collect a bunch of beer bottles to bottle it in, I never got around to making it.  A couple weeks ago, I purchased a 5 gallon  Cornelius Keg from the local Home Brew store. This solved my bottling dilemma, since I will not have to bottle my beer any more.

Last night, I started my Bock Beer. I followed the suggested recipe, except that I didn’t use the yeast that came packaged with it.  After over 3 years of sitting in my home and who know’s how long before I purchased it, it was packaged, I just didn’t know how viable the yeast would be.  Lucky for me, I had a starter of Pacman yeast that I had obtained from a bottle of Rogue Dead Guy’s Ale .  I propagated a starter from the yeast sediment that settles to the bottom of bottle conditioned beers.  It’s not a fast process, but a viable one for obtaining brewing yeast while being able to enjoy a tasty beer too.

I decanted the ‘beer’ from the 2 liter starter of Pacman yeast, leaving only enough beer in my Erienmeyer Flask to swirl up the yeast sediment at the bottom of the flask and pitched it directly into the carboy.  Surprisingly, less than 3 hours later, I was already seeing signs of active fermentation in the carboy.  Yeast started to form up on the surface of the liquid and I could observe a couple bubbles per minute coming out of the blow off tube.  This is by far the fastest fermentation I’ve had.

This morning, when I woke up, I found the yeast going at the beer in a full frenzied fermentation.
